Ingredients

Scale
  • 4 large eggs
  • 2 ripe Roma tomatoes, diced
  • 1 medium white onion, diced
  • 2 fresh green chilies (serrano or jalapeño), diced
  • ¼ cup fresh cilantro, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  2. Heat olive oil in a skillet over medium heat. Sauté the onions and chilies until fragrant and slightly translucent, about 3-4 minutes.
  3. Add the diced tomatoes to the skillet and stir for another 5 minutes until softened.
  4. In a bowl, whisk together the eggs with salt and pepper until well combined.
  5. Pour the whisked eggs into the skillet over the sautéed vegetables. Stir gently until the eggs begin to set but remain creamy (3-4 minutes).
  6. Sprinkle freshly chopped cilantro on top before serving. Serve hot with warm tortillas.
