  • 1 head cauliflower (about 4 cups, chopped)
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 4 cups low-sodium vegetable broth
  • 4 oz cream cheese (full-fat)
  • 2 tsp olive oil

Instructions

  1. Set the Instant Pot to sauté mode. Heat olive oil and sauté diced onions and minced garlic for about 3-5 minutes until fragrant.
  2. Add chopped cauliflower and sauté for an additional 3 minutes.
  3. Pour in vegetable broth, ensuring the vegetables are submerged. Close the lid and set to high pressure for 10 minutes.
  4. Once cooking is complete, allow natural pressure release for 5 minutes before doing a quick release for any remaining steam. Blend soup until smooth using an immersion blender or regular blender.
  5. Stir in cream cheese until fully melted and well-combined.
  6. Serve hot, garnished as desired.
