Ingredients

  • 34 lbs boneless corned beef brisket
  • 1 medium head green cabbage, chopped
  • 4 medium carrots, cut into large chunks
  • 1 lb Yukon Gold or red potatoes, quartered
  • 4 cups low-sodium beef broth
  • Spices packet (included with the corned beef)

Instructions

  1. Prepare the vegetables by washing and chopping the cabbage, carrots, and potatoes into hearty chunks.
  2. Use the sauté function on your Instant Pot to sear the corned beef for 4-5 minutes on each side until browned.
  3. Remove the brisket and pour in the beef broth, scraping up any brown bits from the pot. Return the brisket and add the spice packet.
  4. Seal the lid and cook on manual high pressure for 70 minutes.
  5. Once done, carefully release pressure, then add vegetables on top of the brisket. Seal again and cook for an additional 10 minutes on high pressure.
  6. Release pressure once more, slice against the grain, and serve with vegetables.
