- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1 small red onion, thinly sliced
- 1 cup bell peppers (mixed colors), sliced
- 8 oz fresh mozzarella balls
- ½ cup Italian dressing (store-bought or homemade)
- ¼ cup fresh basil, chopped
- ¼ cup fresh parsley, chopped
Instructions
- Boil water in a large pot. Add salt and cook the pasta until al dente according to package instructions. Drain well.
- While the pasta cooks, prepare the vegetables: halve the cherry tomatoes, dice the cucumber, slice bell peppers, and finely chop the red onion.
- In a large mixing bowl, combine the cooked pasta, chopped vegetables, and mozzarella balls.
