  • 1 pound Italian sausage (mild or spicy)
  • 2 cups fresh spinach
  • 1 cup diced carrots
  • 1 cup small pasta (like Acini di Pepe)
  • 8 cups low-sodium chicken broth
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 1 medium onion (diced)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground beef, Italian sausage, breadcrumbs, parsley, Parmesan cheese, salt, and pepper. Roll into small meatballs (about 1 inch).
  2. Heat olive oil in a large skillet over medium heat. Brown the meatballs on all sides and set aside.
  3. In the same pot, sauté onions, carrots, and garlic until softened.
  4. Add chicken broth and bring to a boil. Stir in small pasta and meatballs; simmer until pasta is al dente (about 10 minutes).
  5. Gently stir in fresh spinach until wilted (about 2 minutes).
