  • 1 lb boneless, skinless chicken breasts (approximately 34 breasts)
  • 3 cloves fresh garlic, minced
  • 1 lb Italian sausage (mild or spicy)
  • 4 cups fresh spinach or kale
  • 1 cup grated Parmesan cheese
  • 8 cups chicken broth
  • 1 cup breadcrumbs
  • Salt and pepper to taste
  • Optional: chopped onions and carrots (for sautéing)

Instructions

  1. Prepare meatballs by mixing ground chicken, breadcrumbs, minced garlic, parsley, salt, and pepper in a large bowl. Roll into marble-sized meatballs.
  2. In a large pot over medium heat, brown the meatballs in olive oil for about 5-7 minutes until golden.
  3. Remove the meatballs and sauté chopped onions and carrots in the same pot for about 3 minutes.
  4. Add chicken broth to the pot and bring to a gentle simmer. Stir in spinach or kale until wilted.
  5. Return meatballs to the pot and simmer for an additional 10 minutes.
  6. Serve hot, garnished with freshly grated Parmesan cheese.
