- 4 cups fresh spinach or kale
- 1 cup grated Parmesan cheese
- 8 cups chicken broth
- 1 cup breadcrumbs
- Salt and pepper to taste
- Optional: chopped onions and carrots (for sautéing)
Instructions
- Prepare meatballs by mixing ground chicken, breadcrumbs, minced garlic, parsley, salt, and pepper in a large bowl. Roll into marble-sized meatballs.
- In a large pot over medium heat, brown the meatballs in olive oil for about 5-7 minutes until golden.
