Instructions

  1. Separate the egg whites from the yolks into two bowls.
  2. Whip the egg whites until soft peaks form.
  3. In another bowl, whisk together the egg yolks, sugar, milk, flour, baking powder, and vanilla until smooth.
  4. Gently fold the whipped egg whites into the yolk mixture until combined.
  5. Preheat a non-stick skillet over low heat; lightly grease it. Pour in about 1/3 cup of batter for each pancake and cover with a lid. Cook for about 4 minutes before flipping and cooking for another 4 minutes until golden brown.
