  • 1/4 cup coconut flour
  • 1/2 cup erythritol
  • 1 tsp baking powder
  • 3 large eggs
  • 1/2 cup unsalted butter (melted)
  • 1 tsp peppermint extract
  • For the Frosting: 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter (softened)
  • 1 tsp peppermint extract
  • 1/4 cup erythritol

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a bowl, whisk together almond flour, coconut flour, erythritol, and baking powder.
  3. In another bowl, beat the eggs and mix in melted butter and peppermint extract until combined.
  4. Combine wet and dry ingredients gently to avoid overmixing.
  5. Spoon the batter into cupcake liners and bake for 20-25 minutes or until a toothpick comes out clean.
  6. For the frosting, whip together softened butter and cocoa powder until smooth; gradually add erythritol and peppermint extract until fluffy.
  7. Once cooled, frost each cupcake generously with minty cocoa frosting.
