  • ½ cup unsweetened cocoa powder
  • ⅓ cup erythritol or preferred sugar substitute
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp peppermint extract
  • 1 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, cocoa powder, erythritol, and melted butter until the texture resembles wet sand.
  3. Press the mixture evenly into a tart pan and bake for 10 minutes.
  4. In another bowl, whisk together heavy cream, eggs, peppermint extract, and erythritol until smooth.
  5. Pour the filling over the pre-baked crust and bake for an additional 25–30 minutes until set but slightly jiggly in the center.
  6. Allow to cool at room temperature before chilling in the fridge for at least one hour.
  7. Slice and serve chilled or topped with whipped cream if desired.
