  • 1 lb ground lamb or beef
  • 2 cups cauliflower florets (fresh or frozen)
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 1 cup diced carrots
  • 3 cloves garlic, minced
  • 1 cup low-sodium vegetable broth
  • ¼ cup heavy cream
  • ½ cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, heat olive oil and sauté the diced onions and carrots until tender, about 5 minutes. Add minced garlic and cook for an additional minute.
  3. Add the ground lamb or beef to the skillet and cook until browned, approximately 8 minutes. Season with salt and pepper.
  4. Pour in the vegetable broth, stir to combine, and simmer for about 10 minutes.
  5. While the meat mixture simmers, steam or boil the cauliflower until fork-tender. Drain well, then transfer it to a mixing bowl. Add heavy cream, shredded cheese, salt, and pepper; mash until smooth.
  6. Spread the meat mixture in the baking dish and top with the cauliflower mash. Create texture on top with a fork for crispiness.
