Ingredients

  • 2 lbs short ribs
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 cup bell peppers (mixed red and green), diced
  • 28 oz canned crushed tomatoes (no-sugar-added)
  • 2 cups beef broth
  • 3 tbsp chili powder
  • 2 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Sear short ribs in a large pot over medium-high heat until browned on all sides. Remove and set aside.
  2. In the same pot, sauté chopped onions and bell peppers until softened, about 5 minutes.
  3. Add minced garlic, chili powder, and cumin; stir for one minute until fragrant.
  4. Return short ribs to the pot along with crushed tomatoes and beef broth. Simmer gently while stirring occasionally.
  5. Cover and cook on low heat for at least 2 hours until meat is fork-tender.
  6. Shred short ribs, stir back into the chili, and serve hot.
