  • 2 cups cooked shredded turkey
  • 1 cup cauliflower rice
  • 1 cup mixed vegetables (peas, carrots, green beans)
  • 1/2 cup heavy cream
  • 1 cup grated sharp cheddar cheese
  • 1 cup low-sodium chicken broth
  • 1 tsp garlic powder

Instructions

  1. Preheat the oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a large bowl, combine shredded turkey, cauliflower rice, mixed vegetables, heavy cream, and half of the cheddar cheese until well mixed.
  3. In another bowl, whisk together chicken broth and garlic powder; pour over the turkey mixture and stir gently.
  4. Transfer filling to the prepared baking dish and top with remaining cheddar cheese.
  5. Bake for 25-30 minutes or until golden brown and bubbly. Allow to cool slightly before serving.
