  • 1 cup green or brown lentils
  • 1 can (14 oz) full-fat coconut milk
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 4 cups low-sodium vegetable broth
  • 2 cups fresh spinach or kale
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp ground turmeric
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Prep all ingredients: chop onion, mince garlic, grate ginger, and rinse lentils.
  2. In a large pot over medium heat, sauté onions in a splash of oil until translucent (about 5 minutes).
  3. Add minced garlic and grated ginger; cook for another minute until fragrant.
  4. Stir in cumin, coriander, and turmeric; cook for about 30 seconds to bloom the spices.
  5. Add rinsed lentils, vegetable broth, and coconut milk; stir to combine.
  6. Bring to a gentle simmer and cover. Cook for 25-30 minutes until lentils are tender but not mushy.
  7. Fold in spinach or kale until wilted, then squeeze lime juice over the curry before serving.
