  • 1.5 pounds Yukon Gold Potatoes, peeled and sliced into 1/4-inch rounds
  • 1 large Yellow Onion, thinly sliced
  • 4 tablespoons Butter
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley, chopped
  • Salt and Pepper to taste

Instructions

  1. 1. Peel and slice the Yukon Gold potatoes into quarter-inch rounds.
  2. 2. Soak the sliced potatoes in cold water for 30 minutes to remove excess starch.
  3. 3. In a skillet over medium heat, melt butter with olive oil. Add onions and sauté until golden brown (10-12 minutes).
  4. 4. Drain and pat dry the soaked potatoes. Add them to the skillet with the onions.
  5. 5. Fry on each side for about 5-7 minutes until crispy and golden brown.
  6. 6. Season with salt and pepper, sprinkle with parsley, serve hot.
