  • 12 cherry peppers
  • 1 cup cooked ground meat (beef, turkey, or chicken)
  • 1/2 cup cooked white or brown rice
  • 1/2 cup cream cheese or mozzarella
  • 1/4 cup fresh herbs (basil or parsley)
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Slice off the tops of cherry peppers and remove seeds.
  2. In a skillet over medium heat, brown the ground meat. Stir in rice, cheese, fresh herbs, salt, and pepper until well combined.
  3. Stuff each pepper with the filling mixture.
  4. In a bowl, whisk olive oil and balsamic vinegar; season with salt and pepper.
  5. Place stuffed peppers in a baking dish and pour marinade over them. Let marinate for at least 30 minutes.
  6. Cover with foil and bake for 25-30 minutes; uncover for the last few minutes to brown tops.
