- 12 cherry peppers
- 1 cup cooked ground meat (beef, turkey, or chicken)
- 1/2 cup cooked white or brown rice
- 1/2 cup cream cheese or mozzarella
- 1/4 cup fresh herbs (basil or parsley)
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Slice off the tops of cherry peppers and remove seeds.
- In a skillet over medium heat, brown the ground meat. Stir in rice, cheese, fresh herbs, salt, and pepper until well combined.
- Stuff each pepper with the filling mixture.
- In a bowl, whisk olive oil and balsamic vinegar; season with salt and pepper.
- Place stuffed peppers in a baking dish and pour marinade over them. Let marinate for at least 30 minutes.
- Cover with foil and bake for 25-30 minutes; uncover for the last few minutes to brown tops.
