- 2 medium sweet onions, chopped
- 4 garlic cloves, minced
- 2 cups low-sodium beef broth
- 4 large carrots, cut into thick chunks
- 4 medium Yukon Gold potatoes, chopped
- 3 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 300°F (150°C). Heat olive oil in a large Dutch oven over medium-high heat.
- Season the chuck roast with salt and pepper; sear in the pot for about 5 minutes on each side until browned. Remove and set aside.
- Add onions and garlic to the pot, cooking until fragrant (about 3 minutes).
- Return the roast to the pot with carrots and potatoes; pour in beef broth until covered. Sprinkle with thyme and rosemary.
- Cover tightly and braise in the oven for about 3 hours until fork-tender. Let rest for 15–20 minutes before serving.
