  • 3 lbs chuck roast
  • 2 medium onions, finely chopped
  • 3 large carrots, cut into thick chunks
  • 2 cups low-sodium beef broth
  • 4 cloves garlic, minced
  • 2 tsp fresh thyme
  • 2 tsp fresh rosemary
  • 1 cup red wine
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Heat olive oil in a large Dutch oven over medium-high heat. Season chuck roast with salt and pepper; sear until browned on all sides (about 3-4 minutes per side). Remove roast and set aside.
  3. Add onions, garlic, and carrots to the pot; cook until onions are translucent (about 5 minutes).
  4. Deglaze the pot with red wine; simmer for 2-3 minutes.
  5. Return the chuck roast to the pot; add beef broth and herbs. Ensure liquid covers the roast.
  6. Cover and braise in the oven for 3-4 hours until fork-tender.
  7. Let rest for 10-15 minutes before slicing. Serve warm with mashed potatoes or bread.
