- 2 tbsp olive oil

Instructions
- Preheat oven to 300°F (150°C).
- Heat olive oil in a large Dutch oven over medium-high heat. Season chuck roast with salt and pepper; sear until browned on all sides (about 3-4 minutes per side). Remove roast and set aside.
- Add onions, garlic, and carrots to the pot; cook until onions are translucent (about 5 minutes).
- Deglaze the pot with red wine; simmer for 2-3 minutes.
- Return the chuck roast to the pot; add beef broth and herbs. Ensure liquid covers the roast.
- Cover and braise in the oven for 3-4 hours until fork-tender.
- Let rest for 10-15 minutes before slicing. Serve warm with mashed potatoes or bread.
