  • 2 medium zucchini, sliced into rounds
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 3 tablespoons extra virgin olive oil
  • 4 garlic cloves, minced
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spray a baking dish with nonstick cooking spray.
  3. Season the chicken breasts with salt and pepper, then place them in the baking dish.
  4. Add sliced zucchini and halved cherry tomatoes around the chicken.
