  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste
  • 1 cup quinoa or rice (uncooked)
  • 2 cups seasonal vegetables (bell peppers, cucumbers, cherry tomatoes)
  • 1/2 cup crumbled feta cheese (optional)

Instructions

  1. In a bowl, whisk together lemon juice, zest, garlic, dill, olive oil, salt, and pepper.
  2. Marinate the chicken in the mixture for at least 30 minutes or up to overnight in the fridge.
  3. Preheat grill or skillet over medium-high heat. Cook marinated chicken for 5-7 minutes per side until cooked through (165°F internal temp).
  4. Cook quinoa or rice according to package instructions.
  5. Chop vegetables while the chicken cooks.
