  • 3 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 tsp lemon zest
  • 6 cups low-sodium chicken broth
  • 1/4 cup fresh parsley, chopped
  • 1 tsp fresh thyme leaves
  • Salt and pepper to taste
  • 2 tbsp extra virgin olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onions, garlic, carrots, and celery until fragrant and translucent.
  2. Add chicken breasts, salt, and pepper; pour in chicken broth. Bring to a gentle boil.
  3. Stir in lemon juice and zest; reduce heat to simmer for about 20 minutes.
  4. Add parsley and thyme; simmer for another 10 minutes.
  5. Remove chicken, shred it with forks, return to the pot. Serve hot.
