Description

Mediterranean Lentil Salad is a colorful and nutrient-dense dish that combines protein-rich lentils with crisp vegetables, all tossed in a zesty dressing. Ingredients

  • 1 cup green or brown lentils
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • ½ cup feta cheese, crumbled
  • ½ cup fresh parsley, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water. In a pot, combine lentils with 3 cups of water; bring to a boil, then simmer for 20-25 minutes until tender.
  2. While lentils cook, chop cucumber, cherry tomatoes, red onion, and parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, pepper, and optional oregano.
  4. Once lentils are cooked and cooled slightly, combine with chopped veggies and feta in a large bowl.
  5. Drizzle dressing over the salad; toss gently until well-coated.
  6. Serve immediately or chill before serving.
