- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved

- ½ cup feta cheese, crumbled

- 2 tablespoons freshly squeezed lemon juice

Instructions
- Rinse lentils under cold water. In a pot, combine lentils with 3 cups of water; bring to a boil, then simmer for 20-25 minutes until tender.
- While lentils cook, chop cucumber, cherry tomatoes, red onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, pepper, and optional oregano.
- Once lentils are cooked and cooled slightly, combine with chopped veggies and feta in a large bowl.
- Drizzle dressing over the salad; toss gently until well-coated.
- Serve immediately or chill before serving.
