Mediterranean Veggie Bowls are a vibrant and nutritious delight, bursting with fresh flavors and textures. Perfect for any occasion, these bowls combine hearty quinoa, crisp vegetables, and zesty dressing to create a satisfying meal that’s both healthy and memorable.


Ingredients

  • 1 cup quinoa
  • 1 medium cucumber (diced)
  • 1 cup cherry tomatoes (halved)
  • 1 bell pepper (sliced)
  • 1/2 red onion (thinly sliced)
  • 1/2 cup Kalamata olives (pitted)
  • 1/2 cup feta cheese (crumbled)
  • 2 tbsp lemon juice
  • 3 tbsp extra virgin olive oil
  • Fresh herbs (parsley or basil) for garnish

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water or vegetable broth. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes until liquid is absorbed.
  2. While quinoa cooks, chop the cucumber, tomatoes, bell pepper, and onion.
  3. In a large bowl, mix the cooked quinoa with chopped vegetables, olives, and feta cheese.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the quinoa mixture and toss gently to combine.
  5. Serve in bowls topped with fresh herbs.
