  • 1 medium head of cauliflower (about 4 cups riced)
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 2 tablespoons tomato paste
  • Juice of 1 lime (about 2 tablespoons)
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Chop the cauliflower into florets and pulse in a food processor until it resembles rice grains. Set aside.
  2. In a large skillet over medium heat, heat olive oil. Add chopped onion and sauté for about 5 minutes until translucent. Stir in minced garlic and diced bell pepper; cook for an additional 2 minutes until fragrant.
  3. Add the processed cauliflower rice and tomato paste to the skillet. Mix well so every grain is coated with flavor.
  4. Sprinkle in chili powder, salt, and pepper. Cook for about 5 minutes until heated through, then add lime juice to enhance the flavor profile.
  5. Toss in freshly chopped cilantro before serving.
