  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp extra virgin olive oil
  • 1 cup sweet corn kernels (fresh or frozen)
  • ½ cup crumbled cotija cheese
  • Juice of 1 lime
  • 1 tsp chili powder
  • ¼ cup fresh cilantro, chopped
  • Salt to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss halved Brussels sprouts with olive oil, salt, and chili powder until evenly coated.
  3. Spread the seasoned sprouts on a baking sheet in a single layer and roast for 20-25 minutes until golden brown and crispy.
  4. In the last 5 minutes of roasting, add sweet corn kernels and cotija cheese on top of the sprouts.
  5. Once roasted, drizzle lime juice over the dish and garnish with chopped cilantro before serving.
