- 2 tbsp extra virgin olive oil
- 1 cup sweet corn kernels (fresh or frozen)
- ½ cup crumbled cotija cheese
- Juice of 1 lime
- 1 tsp chili powder
- ¼ cup fresh cilantro, chopped
- Salt to taste
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss halved Brussels sprouts with olive oil, salt, and chili powder until evenly coated.
- Spread the seasoned sprouts on a baking sheet in a single layer and roast for 20-25 minutes until golden brown and crispy.
- In the last 5 minutes of roasting, add sweet corn kernels and cotija cheese on top of the sprouts.
- Once roasted, drizzle lime juice over the dish and garnish with chopped cilantro before serving.
