- 2 cups shredded chicken (rotisserie or leftover)
- 1 can (15 oz) black beans, rinsed
- 1 cup salsa (your choice)
- 1 cup shredded cheddar cheese
- ½ cup avocado, mashed
- 2 tbsp lime juice
- ¼ cup sour cream
- 2 tbsp chopped cilantro
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Arrange corn tortillas in a single layer on the baking sheet and brush lightly with olive oil. Bake for 8-10 minutes until golden brown.
- Evenly distribute shredded chicken and rinsed black beans over the baked tortillas.
- Spoon salsa over each tortilla and sprinkle with cheddar cheese. Return to the oven and bake for an additional 5-7 minutes until cheese is melted.
- In a bowl, mix mashed avocado, lime juice, sour cream, salt, and pepper for the Avo-Lime Crema.
- Remove from the oven and drizzle crema over each tostada. Top with fresh cilantro.
