- 12 baby potatoes (about 1.5 lbs)
- 1 cup shredded sharp cheddar cheese
- ½ cup sour cream
- ¼ cup chopped green onions
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash baby potatoes, cut in half lengthwise, drizzle with olive oil, and season with salt and pepper.
- Place potatoes cut-side down on the baking sheet; bake for 20-25 minutes until fork-tender.
- Once slightly cooled, scoop out most of the potato flesh into a bowl. Mix with sour cream, cheddar cheese, and most of the green onions.
- Spoon the mixture back into each potato half and top with additional cheese.
- Return to the oven for another 15-20 minutes until heated through and golden brown.
