Description

Mini Twice Baked Potatoes are the ultimate bite-sized delight, combining crispy exteriors with creamy, cheesy fillings. These adorable appetizers are stuffed with a rich blend of sharp cheddar cheese, sour cream, and fresh green onions, making them perfect for game nights or as an elegant starter. Easy to prepare yet impressive in flavor, they are sure to be a hit at any gathering.


Ingredients

  • 12 baby potatoes (about 1.5 lbs)
  • 1 cup shredded sharp cheddar cheese
  • ½ cup sour cream
  • ¼ cup chopped green onions
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash baby potatoes, cut in half lengthwise, drizzle with olive oil, and season with salt and pepper.
  3. Place potatoes cut-side down on the baking sheet; bake for 20-25 minutes until fork-tender.
  4. Once slightly cooled, scoop out most of the potato flesh into a bowl. Mix with sour cream, cheddar cheese, and most of the green onions.
  5. Spoon the mixture back into each potato half and top with additional cheese.
  6. Return to the oven for another 15-20 minutes until heated through and golden brown.
