- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cloves fresh garlic, minced
- 1 can (10.5 oz) condensed cream of chicken soup
- 1 cup sour cream
- 1 cup shredded sharp cheddar cheese
- 1 cup crushed butter crackers (about 30 crackers)
- 1–2 cups broccoli florets (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a large skillet, cook chicken breasts over medium heat until golden brown and cooked through (6-7 minutes per side).
- In a mixing bowl, combine cream of chicken soup, sour cream, garlic, and half of the cheese. Mix until smooth.
- If using, fold in broccoli florets into the sauce mixture.
- Layer cooked chicken in the baking dish and pour the creamy mixture over it. Top with remaining cheese.
- Generously crush butter crackers atop the casserole. Bake uncovered for 25-30 minutes until bubbly and golden.
