  • 4 ripe peaches (sliced)
  • 6 cups day-old brioche or challah bread (torn into pieces)
  • 2 cups whole milk
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp pure vanilla extract
  • 1 tsp ground cinnamon
  • 4 tbsp unsalted butter (melted)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. Toss sliced peaches with sugar and cinnamon; set aside.
  3. In a bowl, whisk together eggs, milk, sugar, vanilla, and cinnamon until smooth.
  4. Fold torn bread into custard mixture until well-coated but not mushy.
  5. Layer half of the soaked bread in the baking dish followed by half of the peaches, then repeat layers.
  6. Pour melted butter over the top and bake for 40-45 minutes until golden brown and set.
