  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, melted
  • ¾ cup pineapple juice
  • 1 cup canned pineapple chunks, well-drained
  • 2 large eggs
  • 2 tsp baking powder
  • 1 cup cherry pie filling (for topping)
  • 2 cups powdered sugar (for frosting)
  • 2 tbsp milk (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and line muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, sugar, baking powder, and a pinch of salt.
  3. Add melted butter, pineapple juice, and eggs. Mix until just combined.
  4. Fold in well-drained pineapple chunks.
  5. Fill cupcake liners about 2/3 full and bake for 20-25 minutes until golden brown.
  6. Cool completely before frosting with cherry buttercream made from softened butter, powdered sugar, and milk.
