Instructions
- Preheat oven to 350°F (175°C) and line muffin tin with cupcake liners.
- In a bowl, whisk together flour, sugar, baking powder, and a pinch of salt.
- Add melted butter, pineapple juice, and eggs. Mix until just combined.
- Fold in well-drained pineapple chunks.
- Fill cupcake liners about 2/3 full and bake for 20-25 minutes until golden brown.
- Cool completely before frosting with cherry buttercream made from softened butter, powdered sugar, and milk.
