Description

Ingredients

  • 2 lbs boneless chicken thighs
  • 4 cloves fresh garlic, minced
  • 1 large onion, chopped
  • 1 cup bell peppers (red or green), chopped
  • 1 can (14.5 oz) diced tomatoes with herbs
  • ½ cup fresh cilantro, chopped
  • 2 tsp adobo seasoning
  • 1 cup chicken broth

Instructions

  1. Chop onion, bell peppers, and garlic.
  2. Heat oil in a large pot over medium-high heat. Sear chicken thighs for 5-7 minutes on each side until golden brown. Remove and set aside.
  3. Add chopped onion, bell peppers, and garlic to the pot. Sauté for 3-4 minutes until fragrant and translucent.
  4. Pour in diced tomatoes and chicken broth; scrape the pot's bottom to incorporate browned bits. Stir in adobo seasoning.
  5. Return seared chicken to the pot, cover, and simmer for 40-45 minutes until chicken is tender.
  6. Stir in chopped cilantro just before serving.
