- 2 lbs boneless chicken thighs
- 4 cloves fresh garlic, minced
- 1 large onion, chopped
- 1 cup bell peppers (red or green), chopped
- 1 can (14.5 oz) diced tomatoes with herbs
- ½ cup fresh cilantro, chopped
- 2 tsp adobo seasoning
- 1 cup chicken broth
Instructions
- Chop onion, bell peppers, and garlic.
- Heat oil in a large pot over medium-high heat. Sear chicken thighs for 5-7 minutes on each side until golden brown. Remove and set aside.
- Add chopped onion, bell peppers, and garlic to the pot. Sauté for 3-4 minutes until fragrant and translucent.
- Pour in diced tomatoes and chicken broth; scrape the pot's bottom to incorporate browned bits. Stir in adobo seasoning.
- Return seared chicken to the pot, cover, and simmer for 40-45 minutes until chicken is tender.
- Stir in chopped cilantro just before serving.
