  • 1 cup celery (diced)
  • 2 hard-boiled eggs (chopped)
  • 1/4 cup fresh herbs (dill or parsley, chopped)

Instructions

  1. Boil the potatoes in salted water until fork-tender (15-20 minutes). Drain and cool.
  2. While cooling, chop the red onion, celery, and herbs.
  3. In a large bowl, whisk together mayonnaise, Dijon mustard, salt, and pepper.
  4. Once cooled, add the potatoes to the dressing along with the veggies and hard-boiled eggs. Gently fold to combine.
  5. Cover and chill in the refrigerator for at least one hour before serving.
