  • 8 cups cubed brioche or challah bread
  • 1 cup pure pumpkin puree
  • 6 large eggs
  • 2 cups whole milk (or dairy-free alternative)
  • 1 cup brown sugar
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. Cube the bread and evenly layer it in the greased dish.
  3. In a large bowl, whisk together eggs, milk, pumpkin puree, brown sugar, cinnamon, nutmeg, and salt until smooth.
  4. Pour the custard mixture over the bread cubes and gently press down to soak.
