  • 1 ¾ cups powdered sugar (200g)
  • 3 large egg whites (90g)
  • ¼ cup granulated sugar (50g)
  • ½ cup pumpkin puree (120g)
  • 1 tsp pumpkin spice
  • ½ cup unsalted butter, softened (113g)

Instructions

  1. Preheat oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. Sift together almond flour and powdered sugar in a bowl; set aside.
  3. In a separate bowl, beat egg whites until foamy. Gradually add granulated sugar while whipping until stiff peaks form.
  4. Gently fold almond flour mixture into egg whites until just combined.
  5. Fold in pumpkin puree and pumpkin spice until uniformly mixed.
  6. Transfer batter into a piping bag and pipe small circles onto prepared baking sheets.
  7. Let sit at room temperature for 30 minutes until they form a skin, then bake for 15-18 minutes or until set.
