Ingredients

  • 1 cup quinoa
  • 2 cups chopped kale
  • 2 medium Yukon Gold potatoes (about 300g), cubed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium vegetable broth
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Prep Your Veggies: Dice the onion and cube the potatoes. Chop the kale into manageable pieces.
  2. Sauté Aromatics: In a large pot over medium heat, add olive oil and sauté the diced onions until translucent (about 5 minutes). Stir in minced garlic until fragrant.
  3. Add Potatoes & Broth: Incorporate cubed potatoes, then pour in vegetable broth. Bring to a boil and cook for about 10 minutes until potatoes are tender.
  4. Incorporate Quinoa & Seasonings: Rinse quinoa under cold water, add it to the pot along with thyme, bay leaves, salt, and pepper. Reduce heat and simmer for another 15–20 minutes.
  5. Finish with Kale: Add chopped kale during the last 5 minutes of cooking to maintain its color and texture.
  6. Taste & Adjust Seasoning: Remove bay leaves, taste the soup, and adjust seasonings as needed before serving.
