  • 2 medium eggplants, sliced into 1/4-inch rounds
  • 1 lb lean ground beef or lamb
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 1/2 cup creamy unsweetened peanut butter
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 cup toasted pine nuts
  • 1/2 cup crumbled feta cheese
  • 2 tbsp extra virgin olive oil
  • Fresh parsley or mint for garnish

Instructions

  1. Prepare the eggplants by salting slices to remove moisture; let sit for 30 minutes, then rinse and pat dry.
  2. In a skillet, heat olive oil over medium heat. Sauté onions and garlic until translucent.
  3. Add ground meat with cinnamon and nutmeg; cook until browned.
  4. Stir in crushed tomatoes and peanut butter; simmer for 15 minutes.
  5. Layer half the eggplant in a baking dish, followed by meat mixture and half the feta; repeat layers.
  6. Preheat oven to 375°F (190°C). Cover with foil and bake for 30 minutes; uncover and bake for an additional 15–20 minutes until golden brown.
  7. Allow to cool for 10 minutes before serving.
