  • 1 medium head of cauliflower (about 1.5 lbs), cut into florets
  • 4 cloves garlic, whole
  • 1 medium yellow onion, finely chopped
  • 4 cups low-sodium vegetable broth
  • 1 cup coconut milk
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss cauliflower florets and garlic cloves with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until golden brown.
  3. In a large pot over medium heat, add olive oil and sauté onions until soft (about 5 minutes). Add roasted cauliflower and garlic.
  4. Pour in vegetable broth until the mixture is just covered. Simmer for 10 minutes.
  5. Transfer the soup to a blender and blend until smooth. Return to the pot and stir in coconut milk.
  6. Serve hot, garnished with fresh herbs or croutons if desired.
