Instructions
- Preheat your oven to 425°F (220°C).
- Toss cauliflower florets and garlic cloves with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until golden brown.
- In a large pot over medium heat, add olive oil and sauté onions until soft (about 5 minutes). Add roasted cauliflower and garlic.
- Pour in vegetable broth until the mixture is just covered. Simmer for 10 minutes.
- Transfer the soup to a blender and blend until smooth. Return to the pot and stir in coconut milk.
