- 4 boneless, skinless chicken breasts (1.5 lbs)
- 1 whole bulb of fresh garlic
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup chopped carrots
- 1 cup chopped celery
- 2 tsp olive oil
- 3 sprigs fresh thyme
- Salt & pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
- Season chicken breasts with salt and pepper. In a large pot over medium heat, sauté the chicken in olive oil until golden brown (5-7 minutes per side). Remove and set aside.
- In the same pot, add chopped celery and carrots; sauté until softened (3-5 minutes).
- Squeeze roasted garlic cloves into the pot, add chicken broth, and stir well. Return chicken to the pot and bring to a simmer.
- Simmer for about 20 minutes until the chicken is cooked through. Shred chicken into bite-sized pieces within the broth.
- Stir in heavy cream and thyme; warm through for a few more minutes before serving.
