  • 2 lbs boneless, skinless chicken thighs
  • 2 large fresh oranges (juiced)
  • 4 cloves garlic (minced)
  • 3 tbsp honey
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp olive oil
  • 1 tsp fresh thyme (or rosemary)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss chicken thighs with olive oil, salt, pepper, and fresh herbs until coated.
  3. In another bowl, whisk together orange juice, honey, minced garlic, and soy sauce.
  4. Pour half the marinade over the chicken and allow to marinate for at least 30 minutes.
  5. Transfer marinated chicken to a parchment-lined baking sheet and roast for 35-40 minutes until golden brown and cooked through.
  6. Let rest for a few minutes before serving with rice or vegetables.
