  • 1 medium onion (quartered)
  • 1 head fresh garlic (whole)
  • 3 tbsp extra virgin olive oil

  • 1 cup fresh basil (packed)
  • 1 tsp sugar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange halved tomatoes, quartered onions, and whole garlic on the baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss gently.
  3. Roast for 30-35 minutes until caramelized and fragrant.
