  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 4 large eggs (room temperature)
  • 1/2 cup spiced rum
  • 1 tsp baking powder
  • 2 tsp vanilla extract
  • 1/2 cup whole milk
  • 1 cup powdered sugar (for glaze)
  • 1/2 cup coconut flakes (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a bundt pan.
  2. In a mixing bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in spiced rum and vanilla extract.
  3. In another bowl, whisk flour and baking powder. Gradually add to the wet mixture while alternating with milk until just combined.
  4. Pour batter into the prepared bundt pan and level it gently.
  5. Bake for 50-60 minutes or until a toothpick comes out clean.
  6. Allow to cool for about 10 minutes, then drizzle with a glaze made from powdered sugar and spiced rum.
