Ingredients

  • 2 salmon fillets (6 oz each)
  • 1 cup sushi rice
  • 1 ¼ cups water
  • 1 cup sliced bell peppers
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 green onions, chopped
  • 2 tbsp pickled ginger
  • Wasabi (optional)

Instructions

  1. Rinse the sushi rice under cold water until it runs clear. Combine with 1 ¼ cups of water in a pot and bring to a boil over medium heat.
  2. While the rice cooks, heat 1 tablespoon of oil in a skillet over medium-high heat. Season salmon fillets with salt and pepper, then place them skin-side down in the hot pan.
  3. Sauté the sliced bell peppers in another skillet for about 3-4 minutes until slightly softened yet crunchy.
  4. Once the rice is cooked, fluff it with a fork and divide it into bowls. Top with cooked salmon and sautéed veggies.
  5. Drizzle with soy sauce and sesame oil, then garnish with green onions and pickled ginger. Serve immediately.
