Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup salsa verde
  • 1 cup long-grain white rice
  • 1 cup bell peppers (chopped)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cups low-sodium chicken broth
  • 2 tsp olive oil
  • Cilantro (optional, for garnish)

Instructions

  1. Prepare all ingredients by chopping the bell peppers and onion and mincing the garlic.
  2. In a large skillet over medium heat, add olive oil. Season chicken breasts with salt and pepper and sauté until golden brown on both sides (approximately 5-7 minutes per side).
  3. Add chopped onions, bell peppers, and minced garlic to the skillet. Cook until onions are translucent (about 3-4 minutes).
  4. Stir in uncooked rice and chicken broth. Bring to a boil.
  5. Once boiling, lower the heat and mix in salsa verde. Cover and simmer for 15-20 minutes until rice is tender.
  6. Remove from heat and fluff rice with a fork. Garnish with cilantro before serving.
