- 1 cup salsa verde
- 1 cup long-grain white rice
- 1 cup bell peppers (chopped)

- 2 cups low-sodium chicken broth
- 2 tsp olive oil
- Cilantro (optional, for garnish)
Instructions
- Prepare all ingredients by chopping the bell peppers and onion and mincing the garlic.
- In a large skillet over medium heat, add olive oil. Season chicken breasts with salt and pepper and sauté until golden brown on both sides (approximately 5-7 minutes per side).
- Add chopped onions, bell peppers, and minced garlic to the skillet. Cook until onions are translucent (about 3-4 minutes).
- Stir in uncooked rice and chicken broth. Bring to a boil.
- Once boiling, lower the heat and mix in salsa verde. Cover and simmer for 15-20 minutes until rice is tender.
- Remove from heat and fluff rice with a fork. Garnish with cilantro before serving.
