  • 1 cup salsa verde (store-bought or homemade)
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1/4 cup fresh cilantro, chopped
  • 1 cup bell peppers, diced (any color)
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • Juice of 1 lime
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and bell peppers; sauté until soft and fragrant.
  2. Season chicken breasts with salt and pepper. Place them in the skillet and brown for about 5 minutes on each side.
  3. Stir in minced garlic; cook for an additional 30 seconds. Add rice and toast lightly for extra flavor.
  4. Pour in chicken broth and salsa verde; stir well to combine, ensuring no clumps of rice remain.
  5. Bring to a gentle simmer, cover tightly with a lid, and cook for 20–25 minutes or until the rice has absorbed most of the liquid.
  6. Remove from heat; stir in chopped cilantro and lime juice just before serving.
