  • 1 lb large shrimp, peeled and deveined
  • 1 bunch fresh asparagus, trimmed and cut into 2-inch pieces
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp toasted sesame oil
  • 2 tbsp vegetable oil (for stir-frying)
  • 2 green onions, chopped (for garnish)
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Gather all ingredients on your counter for easy access.
  2. Wash and cut asparagus; slice mushrooms thinly. Mince garlic and grate ginger.
  3. Heat a large skillet or wok over medium-high heat and add vegetable oil.
  4. Add shrimp in a single layer; sauté for 2-3 minutes until pink and opaque. Remove shrimp from the pan.
  5. In the same skillet, add asparagus first; sauté for about 3-4 minutes until tender-crisp. Then add mushrooms, garlic, and ginger; stir constantly until fragrant.
  6. Return shrimp to the pan; add soy sauce and sesame oil. Toss everything together and sprinkle with red pepper flakes if desired.
  7. Serve hot, garnished with green onions over steamed rice or as is.
