  • 1 lb ground turkey (93% lean)
  • 1 can (15 oz) black beans, drained and rinsed
  • 6 whole wheat tortillas
  • 1 cup chipotle sauce
  • 1 cup low-fat shredded cheese (Monterey Jack or Cheddar)
  • ½ cup Greek yogurt (or sour cream) for topping
  • Fresh cilantro, chopped for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook ground turkey until browned (about 5-7 minutes).
  3. Stir in black beans and chipotle sauce; season with salt and pepper. Simmer for 3 minutes.
  4. Fill each tortilla with the turkey-bean mixture, roll tightly, and place in a greased baking dish.
  5. Pour remaining chipotle sauce over the enchiladas and sprinkle with cheese.
