  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 cup canned corn (whole kernel)
  • 1 can (15 oz) canned beans (black or kidney), drained and rinsed
  • 1 can (15 oz) low-sodium tomato sauce
  • 1 cup shredded sharp cheddar cheese
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Add chopped onion and bell peppers; sauté until softened (about 5 minutes).
  2. Transfer the meat mixture to a slow cooker. Add corn, beans, tomato sauce, chili powder, cumin, salt, and pepper. Stir well to combine.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, sprinkle shredded cheddar cheese on top and cover until melted.
