  • 1.5 pounds boneless, skinless turkey breasts
  • 1 cup uncooked brown rice
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, diced
  • 6 cups chicken broth
  • 1 tsp garlic powder
  • 1 tsp dried thyme

Instructions

  1. Chop the carrots, celery, and onion.
  2. Layer the chopped vegetables in the bottom of your slow cooker. Place turkey breasts on top and season with garlic powder and thyme.
  3. Pour in the chicken broth.
  4. Stir to combine all ingredients thoroughly.
  5. Cover and cook on low for 6 hours or until turkey is tender enough to shred.
  6. In the last hour of cooking, add 1 cup of brown rice.
  7. Once done, shred the turkey in the pot and stir before serving.
