- 1 cup long-grain rice
- 1 cup queso blanco
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup bell peppers, diced (red and yellow)
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Fresh cilantro, for garnish
Instructions
- Prepare all ingredients by dicing onions, bell peppers, and mincing garlic.
- Heat oil in a skillet over medium-high heat. Cook the steak for about 4-5 minutes per side until browned. Let it rest before slicing.
- In the same skillet, add onions and bell peppers; sauté until soft (3-4 minutes).
- Stir in minced garlic, chili powder, cumin, and paprika; cook until fragrant (about 1 minute).
- Add rice and water (or broth) according to package directions to the skillet. Bring to a boil, then reduce heat and cover for 15-20 minutes until rice is cooked.
- Once fluffy, stir in queso blanco until melted. Adjust seasoning if necessary and add sliced steak back into the skillet.
