Description

  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar (sifted)
  • 1 tsp lemon extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. Cream together softened butter and granulated sugar until light and fluffy (3-5 minutes).
  4. Add eggs one at a time, then mix in lemon juice and zest.
  5. Gradually combine dry ingredients with the wet mixture while alternating with milk; stir until just mixed.
  6. Gently fold in chopped strawberries.
  7. Spoon batter into liners about two-thirds full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean. Allow to cool completely before frosting.
  9. Beat together softened butter and powdered sugar for frosting; add lemon extract if desired. Pipe onto cooled cupcakes.
