Description

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 12 oz cream cheese, softened
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 3 large eggs
  • 2 cups fresh strawberries, hulled and sliced
  • ¼ cup powdered sugar

Instructions

  1. Preheat oven to 325°F (160°C). Combine graham cracker crumbs, melted butter, and granulated sugar in a bowl. Press into the bottom of a springform pan.
  2. In another bowl, beat cream cheese and sour cream until smooth. Gradually mix in granulated sugar and vanilla extract.
  3. Add eggs one at a time, blending well after each addition.
  4. In a small saucepan over medium heat, cook strawberries with powdered sugar until they break down into a sauce (about five minutes). Let cool slightly.
  5. Pour half of the cream cheese mixture into the crust. Drizzle half of the strawberry sauce and swirl gently. Repeat with remaining mixture and sauce.
  6. Bake for about an hour or until edges are set but center jiggles slightly. Cool in the oven with the door cracked for one hour before transferring to the fridge to chill.
